  1. CHOCOLATE CAKE

    This is so easy, just throw it all in and mix!

    1 cup of caster sugar
    1/4 cup of softened butter
    2 eggs
    1/4 cup of cocoa
    1 cup of spelt flour
    1/2 cup of milk

    Preheat oven to 160 c fan forced or 180 c conventional

    Grease an 18cm springform pan

    Place all the ingredients into a mixer and beat until the colour turns to a lighter brown, this depends on how strong your mixer is, mine usually takes about 3 minutes.

    Pour mixture into the tin and bake for about 35 minutes or until a knife inserted in the middle comes out clean.

    Leave in the tin for about 10 minutes before turning out onto a cake rack to cool.

    I used a chocolate ganache icing the first time I made this, but today I dusted the top with icing sugar.

    He seems able to tolerate the spelt flour, but not in high doses, so I limit him to one slice a day.
